Do I have to subscribe?

No. Every tin is available as a one time purchase. The subscription exists because matcha oxidizes, and a fresh tin every month is the only way to guarantee you're never drinking stale powder. It's the better way to drink it, not a requirement.

What does “ceremonial grade” actually mean?

It means first harvest leaves, shade grown, stems and veins removed, then stone ground. That's what gives you the deep jade color and the smooth finish instead of the bitter, grassy taste most people associate with matcha. Ours comes from Uji, Kyoto, using Okumidori and Yabukita cultivars. Culinary grade is later harvest and made for baking. It will taste harsh on its own.

How long does a 30g tin last?

About 15 servings at 2g per cup. If you're drinking one every day, that's roughly two weeks. If matcha is a few times a week thing for you, closer to a month. Most of our girls land somewhere in between.

How much caffeine is in a cup?

About 70mg per 2g serving, so about two thirds of a coffee. The difference is the L theanine. It slows how fast the caffeine hits you, which is why you get three to four hours of steady focus instead of a spike and a crash at 2pm.

How do I prepare it correctly?

Sift 2g into your bowl or cup. Add 60ml of water at 70 to 80 degrees, never boiling, because boiling water scorches the powder and turns it bitter. Whisk in a W motion for about 20 seconds until it's smooth and slightly foamy. Then drink it as is, or pour over ice and milk.

Do I need a special whisk?

You don't need one, but it changes the cup. A bamboo chasen breaks up the clumps in a way a spoon can't, and gives you that smooth, foamy top. A handheld frother works too if that's what you have. 

How do I store it?

Keep it sealed and away from light, heat, and air. Once you open the tin, the fridge is the best spot for it. Try to finish it within four to six weeks of opening. Matcha doesn't spoil, it just fades, and you'll taste the difference in the color and the smoothness before anything else.
